Restaurant Manager/Cook

Responsibilities
- Promote restaurant sales growth and profits
- Exhibit and teach a customer-focused attitude
- Develop and execute operational procedures
- Maintain a clean restaurant at all times
- Oversee the restaurant's day to day operations and insures the restaurant is meeting or exceeding its operational standards and goals.
- Prepare meals and determine daily specials.
- Inspect facilities, services and equipment for recommendation of changes, improvements or maintenance.
- Review and initiate requisitions and expenditures to maintain and/or improve standards.
- Prepare daily financial summaries, balances cash/charge receipts, and documents needed transactions.
- Recommend changes for assigned personnel, including hiring, scheduling, promotion, demotion and termination.
- Manage the restaurant activities and insures all customer's complaints, conflicts and requests are resolved orally or in writing.
- Purchase needed food, supplies and equipment items and keeps inventory.
- Provide back up to the restaurant staff as needed.
- Other duties as assigned.
Minimum Qualifications
- H.S. Diploma or the equivalent
- Four years of experience in the food service industry managing restaurant operations for establishments of at least 20 patrons. This background must include staff development, high priority on customer satisfaction, and cost control experience.
- Must have strong food background
- Proven budget and P&L skills
- Catering experience
- Experience with point of sales equipment
- Ability to work a flexible work schedule
- Meet or have the ability to meet the local, state and federal regulations for public health and safety regarding food preparation and cleanliness standards.
Working Environment and Physical Demands
The physical demands described here are representative of those that must be met by an employee to perform the essential responsibilities of the position.
- Work station is Dillingham Alaska, heart of world class sport fishing, hunting and outdoor activities.
- Frequently required to stand or walk for long periods of time
- Occasionally required to lift objects of no more than fifty pounds
- Occasionally required to climb ladders, crawl under fixtures, furniture, etc., or crawl into or behind confined spaces
- May be exposed to harsh or toxic chemicals used for cleaning
Compensation
- Benefit package
- Salary $55-65,000
